Looking for a delicious and healthy breakfast option to add to your summer meal plan? Try the Chocolate Cherry Chia Pudding! This rich and decadent dish is packed with protein and nutrition, and is dairy free, gluten free, and vegan. The best part? It only takes 5 minutes to meal-prep and enjoy all week long.

I personally love all chia seed puddings, they’re delicious! My toddler, however, has a different opinion on the matter. Despite me constantly telling her how amazing it is, she turns her nose up when it’s served. This creation was born from my search for a flavor combo that would allow my toddler to enjoy this easy and nutritious breakfast.

Cherries are in season in the PNW and no better way to enjoy them than to mix them with chocolate and eat them for breakfast. Chocolate chia seed pudding with cherries feels so luxurious, you’ll forget it’s not dessert. Top them with a pinch of salt, coconut flakes, almonds, and cacao nibs for a perfect pudding parfait.

“Did all this thought and effort pay off? Does she love it?” You ask. No, she still doesn’t like them. Stay tuned for our next round in the test kitchen. In the meantime, more for me!

Ingredients

Chia Seeds: When soaked, chia seeds plump up and take on a tapioca texture, making them perfect for puddings. They are also nutritious and will leave you feeling full.

Milk: I like unsweetened almond milk, but coconut milk or soy milk can be great substitutions.

Maple Syrup: Adds a little dash of sweetness. My husband likes to also drizzle extra maple syrup on his after it’s served.

Cacao Powder: Adds a rich chocolate flavor while also being a great source of antioxidants. Can substitute with cocoa powder.

Cherries: Cherries are ripe in the PNW and so delicious. I used fresh red cherries, however, Rainier cherries or frozen cherries (thawed) would be just as tasty.

Salt: Salt accentuates sweetness and brings out the flavor of the chocolate. If you have flaky sea salt, add a pinch! Regular salt will do just fine too.

Ingredients

Scale
  • 2 cups unsweetened almond milk
  • 1/2 cup chia seeds
  • 2 tbsp maple syrup
  • 2 tbsp cacao powder
  • Cherries, diced

Optional Toppings

  • Sea salt
  • Shredded Coconut
  • Slivered almonds
  • Cacao nibs
  • Whipped cream!

Instructions

    • To prepare, whisk together cacao powder, chia seeds, maple syrup, and milk. Allow it to rest for 15 minutes and whisk it again to prevent any clumps from forming.
    • Let it sit. Cover the dish and let it rest in the refrigerator overnight.
    • Enjoy your dish! Once served,  add some diced cherries and any other desired toppings.
