Description

Pastina is your new go-to meal for when you are feeling sick, or just in need of an easy comforting food. With just 4 ingredients, this dish is ready in 15 minutes.

Ingredients

  • 2 cups vegetable broth
  • 2 cups of water

  • 1 cup of pastina (I used Acini di Pepe ,which is a small pearl-shaped pasta*)

  • ⅓ cup grated parmesan

  • 2 tablespoons of butter

  • Salt and pepper to taste

Instructions

  • Once boiling, add pasta. Cook until pasta is tender and most of the liquid is absorbed. For the Acini di Pepe, it was 9 minutes. For smaller pastina, this may be quicker – around 5 minutes.

  • Remove from heat, and stir in butter and grated cheese.

  • Divide into 4 bowls, and add salt and pepper to taste.

Notes

See above post for notes on reheating, and *pasta substitutions.
