Instructions

- Add Spices: Stir in the curry powder, cumin, cardamom and salt. Cook for an additional 1 minutes to allow the spices to bloom, releasing their aromas.
- Incorporate Pumpkin: Next, mix in the pumpkin puree. Stir thoroughly until it’s well combined with the other ingredients, creating a fragrant base.
- Add Liquids: Pour in the vegetable or chicken broth. Stir to combine the ingredients evenly and bring the soup to a gentle simmer.
- Simmer and Blend: Allow the soup to simmer for about 15 minutes, stirring occasionally. Once heated through, use an immersion blender to blend the soup until smooth.
- Adjust Seasonings: Taste the soup and add salt and pepper as needed.
