  • 1/2 cup Greek Yogurt, Whipped Cottage cheese or Coconut Milk
  • 1/4 cup roasted pepitas


Instructions

  1. Sauté Aromatics: Begin by heating olive oil in a large pot over medium heat. Add the chopped onion sauté for about 5 minutes until they become translucent. Add in garlic and stir another minute until fragrant.
  2. Add Spices: Stir in the curry powder, cumin, cardamom and salt. Cook for an additional 1 minutes to allow the spices to bloom, releasing their aromas.
  3. Incorporate Pumpkin: Next, mix in the pumpkin puree. Stir thoroughly until it’s well combined with the other ingredients, creating a fragrant base.
  4. Add Liquids: Pour in the vegetable or chicken broth. Stir to combine the ingredients evenly and bring the soup to a gentle simmer.
  5. Simmer and Blend: Allow the soup to simmer for about 15 minutes, stirring occasionally. Once heated through, use an immersion blender to blend the soup until smooth.
  6. Adjust Seasonings: Taste the soup and add salt and pepper as needed.
  7. Serve: Ladle the soup into bowls. Garnish with a swirl of greek yogurt, whipped cottage cheese or coconut milk. Sprinkle roasted pumpkin seeds for added texture and visual appeal.

Notes

Tips for Blending: If using a standard blender, blend in batches and be careful with hot liquids. An immersion blender makes the process easier and less messy.

Too thick?: Thin out with vegetable broth until you get the desired texture
