Fluffy Blender Banana Pancakes (Easy & Healthy)

  • Author: Jessica Salerno
  • Total Time: 15
  • Yield: 8 4 inch pancakes

Description

These fluffy blender banana pancakes come together in minutes with ripe bananas, oats, and a few pantry staples. Just blend, pour, and flip for a quick and wholesome breakfast the whole family will love.

Ingredients

Scale
  • 2 Bananas

  • 1/2 cup Milk

  • 2 Eggs

  • 1 cup Oats

  • 1/2 cup Flour

  • 2 tsp Baking powder

  • 1/4 tsp cinnamon
  • 1/8 tsp Pinch of salt

Instructions

Prep the skillet. Heat your skillet or griddle to 325°F.

Prep the batter: Add all ingredients to a blender. Blend until smooth.

Cook the pancakes. Lightly grease with butter or oil. Pour the batter onto skillet, about ¼ cup per pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. About 3-4 minutes per side. Gently touch the top of the pancakes to make sure they are done!

Notes

Bananas: Use bananas with a lot of spots, but not black. The bananas make or break the texture. It’s an art and a science; if one batch comes out a little mushy, it’s okay! They’ll still be tasty with peanut butter and syrup. Try it again with some that are less ripe next time.

Making bigger batches: I have a 48 oz blender. I find the perfect amount to fill the blender is 1.5x the recipe. This makes about 12 4 inch pancakes, perfect for my family. See above blog post for measurements.
