Ingredients
-
2 Bananas
-
1/2 cup Milk
-
2 Eggs
-
1 cup Oats
-
1/2 cup Flour
-
2 tsp Baking powder
- 1/4 tsp cinnamon
-
1/8 tsp Pinch of salt
Instructions
Prep the skillet. Heat your skillet or griddle to 325°F.
Prep the batter: Add all ingredients to a blender. Blend until smooth.
Cook the pancakes. Lightly grease with butter or oil. Pour the batter onto skillet, about ¼ cup per pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. About 3-4 minutes per side. Gently touch the top of the pancakes to make sure they are done!
Notes
Bananas: Use bananas with a lot of spots, but not black. The bananas make or break the texture. It’s an art and a science; if one batch comes out a little mushy, it’s okay! They’ll still be tasty with peanut butter and syrup. Try it again with some that are less ripe next time.
Making bigger batches: I have a 48 oz blender. I find the perfect amount to fill the blender is 1.5x the recipe. This makes about 12 4 inch pancakes, perfect for my family. See above blog post for measurements.
