This Maple Pecan Granola combines nutty pecans, golden oats, a touch of cinnamon, and pure maple syrup baked until perfectly crisp. The smell alone fills the kitchen with that nostalgic fall feeling. It’s delicious over yogurt, with milk, or simply by the handful for an easy seasonal snack.

Ingredients

Oats: You’ll want to use Old Fashioned Rolled Oats for this recipe. Steer clear of Instant Oats, or thick cut oats.

Nuts: My favorite pairing for this fall pecan granola is half pecan and half walnuts. You could also add you’re favorite nuts, or whatever you have on hand: almonds, cashews would make excellent options.

Seeds: For this pecan granola, I added pepitas, aka pumpkin seeds, to add a little bit more of that fall flavor and omegas,

Coconut: I prefer shredded coconut over shaved coconut. Shaved coconut adds more of a chewy texture and has a more robust flavor, while shredded is softer and delicate and adds a subtle coconut flavor.

Spices: Cinnamon, nutmeg and salt bring out the fall flavors in this maple granola

Maple syrup: you’ll want to use pure maple syrup and avoid imitation syrups. Choose the grade based on your own flavor preference. Amber is mild and sweet, while dark robust is dark and richer

Oil: We use this olive oil. You can also use melted coconut oil, or your favorite nuetral oil.

Instructions

Prep: Preheat oven to 325°F. Line a large baking sheet with parchment paper

Mix together all ingredients: In a big bowl, combine all ingredients.

Bake: Spread onto baking sheet in an even layer. Gently pat down the oats. Bake for 24 minutes, stirring halfway through, until golden and fragrant. Cool completely before breaking into clusters.

✨ Notes & Tips

  • To achieve those perfect crispy clusters, you can try adding an egg wash to your granola before baking for extra crunch, but I’ve found that there are two key tricks that really make a difference:
    • Press the granola down before baking, but don’t press too hard: this helps the clusters hold together while still remaining crispy.
    • Let the granola cool completely before breaking it apart. I usually let mine sit for a few hours to ensure they firm up perfectly.
    • Sprinkle flaky sea salt after baking to enhance the maple flavor.
    • Enjoy it over yogurt, with almond milk, or straight from the jar.

    Store this maple granola in an airtight container at room temperature for up to 2 weeks (if it lasts that long!)
