Make this easy granola recipe with maple syrup, pecans, and oats for a delicious, healthy breakfast or snack. Perfect granola for any time of the day!
Ingredients
3 cups old-fashioned oats
1 ½ cups chopped pecans (or half pecans, half walnuts if you like variety)
1/4 cup pumpkin seeds
½ cup unsweetened shredded coconut
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
½ cup pure maple syrup
1/2 cup olive oil
Flaked sea salt (optional)
Instructions
Prep: Preheat oven to 325°F. Line a large baking sheet with parchment paper.
Mix all ingredients: In a big bowl, combine all ingredients.
Bake: Spread onto a baking sheet in an even layer. Gently pat down the oats. Bake for 24 minutes, stirring halfway through, until golden and fragrant. Cool completely before breaking into clusters. Sprinkle with sea salt if using.

To achieve those perfect crispy clusters, you can try adding an egg wash to your granola before baking for extra crunch, but I’ve found that there are two key tricks that really make a difference:

- Press the granola down before baking, but don’t press too hard—this helps the clusters hold together while still remaining crispy.
Let the granola cool completely before breaking it apart. I usually let mine sit for a few hours to ensure they firm up perfectly.
Sprinkle flaky sea salt after baking to enhance the maple flavor.
Enjoy it over yogurt, with almond milk, or straight from the jar.
