Description

Cozy, make-ahead Peach Pie Overnight Oats with a spiced peach-apple compote and creamy oat base. Perfect for busy mornings that taste like summer in a bowl!


Ingredients

Peach Compote:

  • 3 ripe peaches (about 2 cups), chopped

  • 1 apple (about 1 cup), chopped

  • ¼ tsp cinnamon

  • ⅛ tsp ginger

  • Tiny pinch of clove

  • 2 tbsp lemon juice

  • 1 tbsp water

  • 1 tbsp brown sugar

Overnight Oats Base:

  • 2 cups rolled oats

  • 2 cups whole milk Greek yogurt

  • 3 cups almond milk

  • ¼ cup chia seeds

  • 2 tbsp maple syrup


Instructions

Make the compote:
Chop peaches and apple into small pieces. Add them to a pot with cinnamon, ginger, clove, lemon juice, water, and brown sugar. Simmer over medium heat until the fruit softens, about 10 minutes. Mash lightly with the back of a spoon for a chunky sauce texture. Set aside to cool.

Mix the oats:
In a large bowl or blender, combine rolled oats, Greek yogurt, almond milk, chia seeds, and maple syrup. Stir or blend until smooth and creamy. Divide into jars or containers.

Refrigerate overnight:
Cover and chill the oats at least 6 hours, or overnight, to thicken.

Assemble + enjoy:
In the morning, spoon oats into a bowl or jar and top generously with peach compote.

Notes

Make it dairy-free: Use your favorite dairy-free yogurt instead of Greek yogurt.

Add crunch: Top with granola, toasted almonds, or crushed graham crackers for that “pie crust” feel.

Meal prep friendly: Store oats for up to 4 days in the fridge; the compote will keep for a week
