Easy Turkey Taco Rice Bowls with Salsa-Lime Sour Cream

Description

These turkey taco rice bowls are an easy weeknight dinner with seasoned ground turkey, canned black beans and frozen corn, rice, fresh veggies, avocado and a simple salsa-lime sour cream.

This is exactly the type of dinner I love making for our family because I can pile everything into a bowl for myself and serve the exact same ingredients separately for the kids. No separate kid dinner required.


Ingredients

Seasoned Turkey

  • 1 pound ground turkey
  • 1 tablespoon chili powder
  • 2 teaspoons paprika
  • 2 teaspoons cumin
  • 1 teaspoon garlic powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 23 tablespoons water

Black Beans + Corn

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 can corn, drained
  • Salt, to taste

Bowls

  • Cooked rice
  • Chopped romaine
  • Chopped tomatoes
  • Shredded carrots
  • 12 avocados

Salsa-Lime Sour Cream

  • ½ cup sour cream
  • 1/3  cup chunky salsa
  • Juice of 1 lime
  • 1/4 tsp cumin
  • 1/4 tsp salt
  • 1 tsp syrup
  • 1-2 tbsp water to thin

Instructions

  1. Cook the ground turkey in a skillet over medium heat, breaking it apart as it cooks.
  2. Add the chili powder, paprika, cumin, garlic powder, oregano, salt and pepper. Add 2–3 tablespoons water and cook until the turkey is cooked through and coated in the seasoning.
  3. Add the black beans and corn to a separate skillet, season with salt and warm through.
  4. Stir together the sour cream, salsa, lime juice and salt.
  5. Divide rice among bowls. Top with turkey, black beans and corn, romaine, tomatoes, carrots and avocado.
  6. Finish with the salsa-lime sour cream and serve.
