Description
Make these frozen peanut butter banana chocolate pumpkins with just 6 ingredients! An easy, no-bake Halloween treat with a creamy filling and chocolate shell. You won’t believe it’s not ice cream!
Ingredients
Scale
- 1 ripe banana
- ½ cup natural peanut butter
- ¼ cup plain Greek yogurt
- ½ teaspoon vanilla extract
- ½ cup dark chocolate chips
- 1 teaspoon coconut oil (optional, for easier melting)
Instructions
- Prepare the filling. In a medium bowl, mash the banana until very smooth. Stir in the peanut butter, Greek yogurt, and vanilla extract until creamy and well combined.
- Melt the chocolate. Add the dark chocolate chips and coconut oil, if using, to a microwave-safe bowl. Microwave in 20-second intervals, stirring between each, until smooth.
- Coat the silicone molds. Spoon a thin layer of melted chocolate into the bottom of each silicone mold. Use the back of a spoon to spread the chocolate into the details.
- Set the chocolate. Place the molds in the freezer for approximately 10 minutes, or until the chocolate has hardened.
- Add the filling. Spoon the peanut butter banana mixture over the chocolate, filling each silicone mold. Smooth the tops with a spoon or spatula.
- Freeze. Transfer the molds to the freezer for 2–3 hours, or until completely firm.
- Remove and enjoy! Carefully pop the pumpkins out of the silicone molds. Let them sit at room temperature for a few minutes before enjoying if they’re too firm straight from the freezer.
